Preheat the oven to 350. Cut the top off the bell peppers and remove all seeds then lightly brush olive oil on the inside and outside of the peppers then set them aside.
Heat the olive oil in a non-stick pan. Cook the bacon until crispy then remove, keeping as much of the fat and oil in the pan as possible.
Add the onion and mushrooms to the oil and cook them until soft. Then add the beef and paprika and cook until the beef is browned. Season the mixture with salt and pepper, then remove from heat.
Scoop the beef mixture into the bell peppers then place the peppers on a non-stick baking tray and bake for 20 - 25 minutes. Once done remove and allow to site for a few minutes before serving. Garnish with parsley and serve warm. Enjoy!
