Low Carb Broccoli Cheddar Soup

Our low carb broccoli cheddar soup is so yummy and filling, I promise you that won’t even miss the potatoes! This soup is an excellent keto option  with only 2 net carbs per serving! It's perfect for anyone following a keto diet!

  • Cut the broccoli into bite size pieces and set them to the side. Add butter, onion, celery, salt and pepper to a sauce pan and cook until the onions and celery are translucent. 
  • Next add the broccoli and cook for additional 2 - 3 minutes or until broccoli turn bright green.
 Then add the chicken broth and heavy whipping cream and bring to a boil.
  • Once it comes to a boil, turn it down to a simmer and slowly add the cheese mixing it in as you go.
  • Once the cheese is fully incorporated, add the anthem gum and stir until the soup thickens. Serve warm with crumbles bacon on top and enjoy!
