Low Carb Bacon Zucchini Casserole

If you love bacon and zucchini then you're going to fall in love with my low carb bacon zucchini casserole. This keto casserole is layered with tons of flavor and the best part is it's only 2 net carbs per serving! For an extra bang, serve it with our low carb buttermilk ranch dressing!

INGREDIENTS

INSTRUCTIONS

  • Preheat your oven to 400 F. Next, layer the bottom of an 13 x 9 inch baking dish with 8 slices of your bacon. This is the pan I use. Put the baking pan in the oven while it is warming up and cook the bacon slices until they are form but not crispy.
  • While the bacon is cooking, cup your chicken breast lengthwise into thin slices. Aim for 3 - 4 thin slices per chicken breast. Season both sides with garlic powder, salt & pepper.
  • Next use a mandoline slicer to cut your zucchini into thin slices. This is the one I use.
  • Once the bacon is done, add the layer of seasoned chicken breast to baking dish. Next add the slices of zucchini to the pan. Season the zucchini with garlic powder, salt & pepper.
  • Place the baking pan in the oven and cook for 45 minutes or until both the chicken and zucchini are fork tender. 
  • While the casserole is cooking, chop the remaining bacon into small pieces. Add to a saute pan and cook bacon until it's done but not crispy. Do not drain the grease. 
  • After 45 minutes remove the baking dish from the oven and spread the cheese over everything evenly. Next take the bacon and grease and spread it evenly over the cheese. 
  • Turn the oven down to 300 and place the baking pan back in the oven and cook until the cheese completely melts.
  • Serve warm with a side of our low carb buttermilk ranch dressing and enjoy!
