A while back I was craving some fudge and although I cook a lot, this particular day I was feeling sorta lazy and I didn't want to fix anything that required a lot of time!
I was looking for something simple because I didn't want to prepare any type of complex recipe… I just wanted something chocolatey and yummy!

I looked in the fridge and pantry to see what ingredients I had so I could figure out what I'd be able to make and then I went on a search to find an easy recipe to make!
I remembered seeing one recipe for a low carb chocolate fudge that was made with chocolate, cream cheese and about 10 other ingredients!
When I saw that this recipe didn't require any cooking and that it would take me less than 20 minutes to make and then all I had to do what pop it in the fridge – I was sold!
So against my will, I had to go to the store and purchase most of the ingredients to make the recipe.
But like some of the other low carb or keto fudge recipes I'd tried in the past, this particular recipe was disappointing and while the recipe had some potential let's just say it was too busy and the taste… well let's just say that it left a lot to be desired!
That's when I begin to tinker with the original recipe and playing around with the measurements and ingredients.
I wanted something that would be yummy and delicious yet simple to make and didn't have a lot of ingredients!
Something that was sweet and chocolatey but that wouldn't require me to have actual chocolate to make it because that stuff never stays around long in my house!
The end result was this creamy, fat filled fudge that could be made in less than 10 minutes and then refrigerated for a little to get that full fudge effect!
Now this recipe is not really considered a fat bomb, but because of all of the healthy fats it has, I would say it's pretty close to being considered one.

Now making this fudge is super easy.
1. Add the butter and cream cheese to a mixing bowl and using a hand mixer, blend them together until it's nice and creamy.
2. Next add in your vanilla extract, cocoa powder and Lakanto Granulated Sweetener and mix well.
3. Last thing you need to do is add in the walnut pieces and put the mixture into an 8 x 8 dish then chill for 3 – 4 hours.

Low Carb Walnut Keto Fudge

What size pan do you use?

Hey Mary Ellen! You can use whatever size you like. I normally use an 8 x 8 pan but sometimes I double the recipe (because it’s so freaking yummy) and use a larger pan or make it in a smaller bread pan to make the pieces thicker. So it all comes down to how much you plan to make and how thick you want your pieces to be. I know that’s not an exact answer but it’s how I make my fudge! 😉 Hope you enjoy it!

As much as I understand the need to advertise in those blogs , some contradiction are beyond to comprehend : Keto vs LandOlake butter made of Canola Oil : NO NO NO – No canola Oil .

Not sure which ad you saw but Land O Lakes actually has real butter. They also have one with honey and another one with canola oil. It’s not KerryGold which is the GOLD STANDARD for keto but at least hey… at least it’s REAL BUTTER! LOL

I followed the published recipe and used an 8X8 inch pan. Unfortunately the fudge was only about 1/2 inch thick – much different than what I expected.
Are there any corrections to recipe? Here’s what I used:
1/2 cup butter
1/2 cup cream cheese
2 Tbsp sweetener (Lakanto granulated)
3Tbsp cocoa powder (Hershey’s)
1tsp vanilla extract
1/4 cup walnuts
