These fat bombs have a 8 ingredients but once you make a batch you'll realize that each one is very important and you can't skimp on anything!

And making these things are super easy.
1. You want to melt your coconut milk and coconut oil in a bowl then mix in your Lakanto Granulated Sweetener, unsweetened shredded coconut, pure vanilla extract and pink himalayan and blend well.
2. Once done you're going to create 12 bars from the mixture and add them to a non-stick baking sheet that's been covered with wax paper.
3. Melt your chocolate in the microwave and then drizzle over the coconut bars. You can also dip them all over or dip the bottoms. The choice is yours! Then put the entire non-stick cookie sheet in the freezer and allow them to firm up. Serve cool and enjoy!

Omg!!! These are fantastic. I made in silicone cupcake liners instead of molding my own. Coconut, 1 almond, chocolate. Turned out great and all the same size.

Can Stevia be substituted for Swerve. Have not seen this in Canada.

Hey Janet! You absolutely can use Stevia! I would consider using a stevia/erythritol blend that’s been created for baking like this one because because it doesn’t have an aftertaste.
If you can’t find it locally then I’m sure you can find it on Amazon!

I just made these and used the Lakanto sweetener. The sweetener stayed in a granular form and now they are gritty. I am not sure what I did wrong.
