Low Carb Almond Joy Bars

INGREDIENTS
- 1/3 Cup Lakanto Granulated Sweetener
- 1 Tsp Pure Vanilla Extract
- 1 Cup Unsweetened Shredded Coconut
- 2 Tbsp Coconut Oil
- 3 Tbsp Coconut Milk
- 1 Pinch Kosher Salt
- 3.5 Oz 90% Dark Chocolate
- 24 Whole Almonds
INSTRUCTIONS
- In a microwavable bowl, melt the coconut oil and coconut milk (if solid) in the microwave for about 30 seconds.
- Next, stir in the Lakanto Granulated Sweetener, coconut, vanilla and pink himalayan salt. (By the way you can get 15% off your Lakanto Granulated Sweetener when you use the code: KetoCoach)
- Put down a piece of wax paper and shape them into 12 bars and then press 2 almonds into each piece.
- Melt the chocolate by breaking the chocolate bar into chunks and microwaving it on high for 30 seconds. Take out of the microwave and stir then microwave again for another 30 seconds. Stir again and repeat until 80% has melted. Then stir until it the chocolate has completely melted.
- Drizzle chocolate on the top and sides of the bars and if you like, you can use an spatula to get the bottom part of the sides. Refrigerate or freeze until the chocolate is hard.
- Once it hardens, flip the bars over and coat the bottoms. They will look prettier if you can manage to cover all the coconut but don't worry - they are delicious either way! Enjoy!

Can Stevia be substituted for Swerve. Have not seen this in Canada.
Hey Janet! You absolutely can use Stevia! I would consider using a stevia/erythritol blend that’s been created for baking like this one because because it doesn’t have an aftertaste.
If you can’t find it locally then I’m sure you can find it on Amazon!
